The Ultimate Gluten-Free Vegan Granola Recipe

For the last year, Iain has been treating our retreat guests with his homemade gluten-free and vegan granola. They've been desperate for the recipe. Well, here it is, the moment you've all been waiting for!


Ingredients You'll Need


  • 720g oats (ensure they are gluten-free)

  • 300g nuts and seeds (we recommend pumpkin seeds, hazelnuts, cashews, and pecans)

  • 2 tsp salt

  • 1 tbsp ground cinnamon

  • 190g melted coconut oil (or olive oil)

  • 275g maple syrup (or Golden Syrup for a vegan option, or honey if not)

  • 2 tsp vanilla extract

  • 100g optional desiccated coconut

  • 250g dried fruit (we use 150g dried mixed fruit and 100g cranberries)


Simple Step-by-Step Instructions


  1. Preheat your oven to 180°C (356°F).

  2. In a large bowl, mix together the oats, nuts, seeds, salt, and cinnamon.

  3. Pour in the melted coconut oil, maple syrup, and vanilla extract.

  4. Mix until all ingredients are well coated.

  5. Transfer the mixture into a roasting dish. You can line it with greaseproof paper if preferred.

  6. Bake in the preheated oven for 10 minutes.

  7. Add the desiccated coconut (if using) and stir the mixture.

  8. Bake for an additional 10 minutes, then stir again.

  9. Continue baking until the granola is golden and dry. This usually takes a total of 25-30 minutes. Be careful not to let the nuts and seeds burn.

10. Remove the granola from the oven and let it cool for 30 minutes.

11. Once cooled, add the dried fruit and mix thoroughly.

This granola is perfect for breakfast or as a healthy snack. You can serve it with almond milk or yogurt. It’s also great as a topping for smoothie bowls. The versatility of this recipe makes it a must-try for anyone looking for a nutritious option.

More Granola Variations


Nut-Free Option


If you have nut allergies, you can easily modify this recipe. Simply replace the nuts with additional seeds. Sunflower seeds and chia seeds work well. This will keep the crunch while making it safe for everyone.


Sweetness Levels


Adjust the sweetness to your taste. If you prefer a less sweet granola, reduce the amount of maple syrup or coconut.


Add Spices


Feel free to experiment with spices. Adding a pinch of nutmeg or ginger can give your granola a delicious twist. Cinnamon is a classic, but don’t be afraid to try something new!


Storage Tips


Store your granola in an airtight container. It will stay fresh for up to two weeks (if you haven't devoured it by then!).


Top Tip from Iain


Use Shredded Wheat as your base and sprinkle your lovingly prepared Granola on top with a few slices of fresh fruit. It'll make it last much longer and still taste just as good.
