Iain's Famous Gluten Free & Vegan Granola Recipe

For the last year Iain has been treating our retreat guests with his homemade gluten free and vegan granola and they've been desperate for the recipe. Well, here it is, the moment you've all been waiting for!
Ingredients
720g oats (we get the oats which state gluten free)
300g nuts and seeds (we use pumpkin seeds, hazelnuts, cashews, and pecans)
2 tsp salt
1 tbsp ground cinnamon
190g melted coconut oil (or olive oil)
275g maple syrup (or Golden Syrup for vegan option, or honey if not)
2 tsp vanilla extract
100g optional desiccated coconut
250g dried fruit (we use 150g dried mixed fruit + 100g cranberries)
Your simple step by step
Preheat your oven to 180°C (356°F).
In a large bowl, mix together the oats, nuts, seeds, salt, and cinnamon.
Pour in the melted coconut oil, maple syrup, and vanilla extract.
Mix until all ingredients are well coated.
Transfer the mixture into a roasting dish (you can line it with greaseproof paper if preferred).
Bake in the preheated oven for 10 minutes.
Add the desiccated coconut (if using) and stir the mixture.
Bake for an additional 10 minutes, then stir again.
Continue baking until the granola is golden and dry (usually takes a total of 25-30 minutes). Be careful not to let the nuts and seeds burn.
Remove the granola from the oven and let it cool for 30 minutes.
Once cooled, add the dried fruit and mix thoroughly.
